This range was first introduced in 2003 with the Advocate Cabernet Merlot and has been steadily expanded since then to include Syrah, Vermentino, Viognier and Chardonnay. Many of the wines in this range have won prestigious awards. All the varieties chosen for the wines in this range perform well in the soil and climatic conditions at Saint Hilaire. In the winery the objective is to produce elegant, expressive wines with good structure and length. For the whites, the vinification involves alcoholic fermentation in the barrel with controlled temperature, producing well-integrated oak which does not dominate the fruit, followed by limited barrel ageing to round off the structure. For the reds, the malolactic fermentation takes place in the barrels followed by a longer period of barrel ageing, before selection and blending of the barrels for the finished wines.
