Premium blend from our best parcels – rich and full-bodied with intense dark fruit flavours
This top-quality wine is made from 70% Cabernet Sauvignon and 30% Merlot grapes, hand-picked from 30-35 year-old vines on some of our best parcels of land. This results in intense fruit flavours characteristic of these classic varieties but under the warm Languedoc climate they gain an extra touch of ripeness and sunshine. Aged for 12-14 months in French oak barrels this beautifully made wine is ready to drink now but will continue to improve for many years to come.
This wine presents intense aromas of ripe, dark fruit that develop more sophisticated tones of leather and mocha with ageing. Rich and robust on the palate with a long sensuous finish this wine is perfect with red meat and strong flavoured cheeses.
Varieties: 70 % Cabernet Sauvignon 30 % Merlot
Hand harvest of the grapes at their optimum maturity. Alcoholic fermentation of each variety separately in small open tanks with daily hand pigeage. Towards the end of its alcoholic fermentation the juice is hand pressed and racked by gravity to barrel to complete alcoholic fermentation and then to undergo malolactic fermentation. Constant attention during ageing in the barrels, followed by selection of the best barrels for blending.
Ageing: In French oak barrels for 12 months.
