Le Baron Chardonnay

A rich and creamy barrel fermented Chardonnay
This premium wine is made from grapes hand-picked from 25-30 year-old Chardonnay vines on some of our best parcels of land giving concentrated flavours and minerality. Fermented in a combination of new and old 400 litre French oak barrels, each with a different yeast, adds extra complexity to the wine and allows our Head Winemaker to select only from the best barrels to create a wine to rival the world’s best Chardonnays.
Ready to drink now this wine will continue to improve in bottle for several years.
Tasting Notes
A pale yellow/straw colour becoming more golden with age. Delicate floral aromas, classic toasted brioche flavours, crisp acidity and a rich full-bodied mouth make this wine perfect with rich and creamy sauces, white meat and fish dishes.
Varieties: 100 % Chardonnay, hand–harvested
Gentle pneumatic pressing of whole bunches. Cold settling, gentle racking to barrel for alcoholic fermentation at controlled temperature – each barrel with a different yeast including one with natural yeast. No malolactic fermentation.
Ageing
In French oak 400 litre barrels (50% new 50% 1 year) for 6 months with periodic stirring on lees.
