
A crisp and elegant unoaked Chardonnay
Domaine Saint Hilaire was one of the first local vineyards to plant the Chardonnay grape variety which has risen in popularity and quality to rival the wines from traditional (much more expensive) regions.
Our Chardonnay is harvested at night and fermented at a cool temperature to maximise freshness and the characteristic fruit flavours.
Tasting Notes
Notes of citrus and apple on the nose with a touch of minerality. A structured wine with well balanced acidity showing layers of complexity. Enjoy it on its own or alongside white meats, salads and cheeses.
Varieties : 100 % Chardonnay
Mechanical harvest at night at the coolest period in order to avoid oxidation and keep the freshness in the wine. Cold settling at c. 8°C, fermentation in stainless steel tanks in several separate lots with different selected yeasts at controlled temperature (16-17°C); no malolactic fermentation; blending together of different lots after termination of fermentation.
Ageing: Remains in stainless steel tank for 3 to 4 months.
