Late harvested Viognier dessert wine
One of my early ambitions for Saint Hilaire was to produce a sweet / dessert wine. Technically this is our second sweet wine as we tried in 2016 but weren’t entirely happy with the result (it wasn’t released for sale) but the 2018 is a cracker !
We made this wine by leaving the grapes on a small Viognier parcel until long after the normal harvest date, Over time the grapes got sweeter and sweeter almost turning to raisins on the vine which is when we harvested them. Effectively this means we have packed the flavour of grapes that would normally make 3x75cl bottles of Expression Viognier into one 50cl bottle !
After fermentation we aged the wine in French oak barrel for a year and are now releasing just 100 50cl bottles as we want to see how the remaining wine continues to age in barrel
Orange blossom and peach aromas with apricot and honey flavours – the perfect balance of fruitiness and sweetness. Pairs well with most desserts – try it with cheesecake, crème brûlée or of course Christmas pudding and mince pies.
